Today I spend my afternoon cooking in the kitchen. I wanted to make some cupcakes with the ingredients that I already have at home. I found this recipe by Marzia and I improvised in my own way, and I got myself nice chia cupcakes.
Here is what I used.
-3/4 cup plain flour
-1/4 cup butter
-1/2 cup milk
-1 tablespoon chia and a bit of cinnamon
-1/2 teaspoon vanilla extract
-1/2 teaspoon almond extract
-1/2 teaspoon baking powder
-1/4 coconut oil / if you have it is better to add peanut butter or almond butter
With this recipe you can make 6 chia cupcakes and you can add other ingredients if you want to.
First you have to mix the baking powder and the flour in a big bowl.
In a different bowl, mix the sugar and the butter. If you have a mixer that would be perfect. I used a fork and my hand.
When that is well mixed add the coconut oil, chia seeds, cinnamon, the egg and the vanilla and almond extracts.
When the mixture is nice, add it to the flour and add the milk.
Mix everything very well and when the consistency is smooth enough, pour it into the tin.
Before that put some cupcakes cases in the tin.
Cook in a preheat oven for 20-25 minutes on 175*C.
When they are ready and all puffy you can choose to put some decorations on them, or make some icing. I added the honey and on top of it sliced almonds.
They taste good and they are not too sweet, but is is a nice desert. They came a bit oily, most probably because of the coconut oil, and I will honestly give my recipe 3 out of 5.
